I have been trying to go back to the basics with my meals to keep them quick, easy and cost effective. I have the worst habit of "buying all the things" at the grocery store because I want to try everything and then end up with a fridge full of things I've eaten only a few times. Does anyone else struggle with this too? So, here's to simplicity! Working from home on Friday's is the best! No tup meals for this girl! ? But, I still make a few extra items at dinner the night before so I can make a plate quick! ?⠀ _⠀ #WhatsOnMyPlate: leftover roasted Japanese sweet potato + @abbysbetter date pecan butter (best nut butter ever) + roasted carrots + fluffy scrambled eggs made with @saucylipsfoods jalapeno apple + blueberries + microgreens⠀ _⠀ On top of my new morning routine I have been working towards getting 8 hours of sleep per night. I am slowly trying to reset my schedule so that I am asleep by 8:45pm, but my body is still hanging onto that 6.5 hour sleep and has me up at all crazy hours of the night! 3:30-4am is just too early in my book! When you can't go to yoga because your ribs are still healing, you do the next best thing. Cozy up on the couch with a big old plate of mac and cheese! _ #WhatsOnMyPlate: @twrgrassfedbeef sausage + roasted broccoli and @melissasproduce purple brussel sprouts (both tossed with #ghee) + @Eatbanza cacio e pepe mac and cheese _ The last few days were so nice hear (60+ degrees) and today we are back in the 30's. Thankfully, I was able to thaw out for a few days. It's really crazy how much the weather impacts my cravings. One day summer salads the next pasta. _ On another note, since I haven't been able to workout due to my ribs, I have really been enjoying my mornings by taking them slow. I downloaded @headspace and started meditating and then read my devotional while sipping my ACV/Lemon water. It is really incredible how powerful a slow start with a little self-care can be! I do miss my morning workouts, but honestly, I am not minding the extra sleep and relaxation time. Does anyone else use @Headspace?
